Any time I am at a restaurant my eyes {and stomach} are always drawn to two things - Beef Dip and Philly Cheesesteak. I don't typically eat a lot of bread, and perhaps that's one of the appeals of these dishes, but just seeing them on the menu gets my mouth watering.
So when I was in charge of a freezer meal class, and came upon this amazing {looking} recipe, I was eager to try it out. I love meals that can be made that day or frozen for future use. And I love the idea of meat marinating while it thaws - delicious!
I am a huge fan of the slow cooker - for some reason it makes me feel all *perfect wife-ish* when I can serve my husband a great, hot meal, fresh from the slow cooker.
So here's what I did:
4lbs roast (I didn't worry about the exact size - actually just bought the cheapest. lol)
1 Tbsp minced garlic
1 Tbsp rosemary (I don't care for rosemary so leave it out)
3 bay leaves
1 cup of soy sauce
6 cups water (leave out if planning to freeze for another day)
Cook together in Crock Pot for 6-10 hours (longer the better). {I pulled out a frozen roast one night and put the above ingredients, except the water, in the bag while it thawed overnight}
Now here's where it gets fun (and where I added my own take):
Take Sub Style buns and butter inside. Place sliced/shredded roast in bun, topping with sauteed onions and red peppers. Finely dice banana peppers (walmart brand in a jar), and lightly sprinkle on. Top with piece of Swiss, Provolone, or other cheese (even cheese sauce). Bake in oven at 350 until cheese is melted (about 5 minutes) and spread mayo on inside of bun (mustard too if you want).
The liquid from the crock pot is the best au jus - and you have yourself an incredible beef dip/philly cheesesteak sandwich! {Your football parties will never be the same!}
**Quick tip: Don't have time to cook an entire roast? Pick up some thinly sliced roast beef from your local deli and use that. Cook soy sauce and water (same measurements as reipe or eyeball it) together to make au jus - you can add diced garlic or some french onion soup mix too if you want. Feel free to marinate the roast beef while the au jus is heating up. Finish off sandwich as described.**
